Zaalouk Marocain. Add all ingredients except for cilantro to a large skillet or Dutch oven with a cover. Heat olive oil in a skillet over medium heat.
Halve the tomatoes and remove the seeds. Peel the tomatoes, cut into small pieces and cook in a pan with olive oil, paprika, salt and pepper. Cut the eggplants into small pieces.
Add all ingredients except for cilantro to a large skillet or Dutch oven with a cover.

Zaalouk is a traditional Moroccan salad made by cooking eggplant, tomatoes, garlic, and flavorings such as cumin, paprika, coriander, and parsley. Rinse and finely chop the cilantro. Also, add the remaining spices; salt, cumin and paprika.
