Moussaka Courgette. Using a wooden spoon, sauté the onions until translucent. Preheat the frying pan or skillet over low heat.
Brown the lamb, drain excess fat, and add the spices. Moussaka aux aubergines et pois chiches. For the courgettes, heat a griddle pan.
Cover with an inverted plate and weigh down the plate with a heavy can or jar.
In other variations potatoes, zucchini and other combinations of vegetables are combined.
As soon as the onions are soft, pour the wine and let it simmer for a few minutes until the alcohol evaporates. White Sauce topping: (If no packet) Melt butter in a pan. Butter the bottom and sides of the pan and layer the potatoes first (if you're using them), then half the eggplants.
