Sift the flour and salt into a large mixing bowl. Using both hands, fold a crepe in half and place down on on a cookie sheet. Stir in the beer, mixing until smooth.
Cook until reduced by at least half.
Reduce heat to maintain a simmer.
Add the garlic and dried thyme. Melt the butter in a pan with some olive oil. This dish was born when French chicken crepe wedded bechamel sauce.
