Garnir de mozzarella et de parmesan.
Put the cooked slices on the paper towel to absorb extra oil.
Top with a layer of fried aubergine, tomato sauce, grated Parmesan, and sliced mozzarella. Remove from the heat and set aside. To assemble the parmigiana, put a scoop of tomato sauce at the bottom of an ovenproof dish.
